Ingredients

Instructions
- Prepare the quick-cook white rice according to package directions.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
- Add the frozen stir-fry vegetable blend to the skillet and cook, stirring frequently, until vegetables are tender-crisp, about 5-7 minutes.
- While vegetables cook, whisk together the soy sauce, honey, rice vinegar, and cornstarch in a small bowl until smooth.
- Pour the sauce over the chicken and vegetables in the skillet. Cook, stirring constantly, until the sauce thickens and coats the chicken and vegetables, about 1-2 minutes.
- Serve the sweet and savory chicken stir-fry immediately over the prepared white rice.
Notes
To make this even faster, use pre-cooked chicken breast. Adjust honey and rice vinegar to balance sweet and tangy to your liking.
