- 1 tablespoon avocado oil

Instructions
- Heat avocado oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess grease.
- Add sliced red bell pepper to the skillet and sauté for 3-4 minutes until slightly tender-crisp.
- In a small bowl, whisk together soy sauce, sriracha, honey, rice vinegar, and garlic powder.
- Pour the sauce over the pork and bell pepper mixture in the skillet. Stir to coat evenly and simmer for 2-3 minutes, allowing the sauce to thicken slightly.
- Serve the sweet and spicy pork skillet over cooked rice.
Notes
Adjust sriracha to your preferred spice level. A garnish of toasted sesame seeds or chopped green onions would be a nice addition if desired.
