Instructions
- In a medium bowl, whisk together 8 large eggs, 1 cup low-fat cottage cheese, 1/4 cup skim milk or water, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper until well combined.
- Heat a large non-stick skillet over medium-low heat. Pour in the egg mixture. Cook, stirring gently with a rubber spatula, until the eggs are mostly set but still moist, about 5-7 minutes. Remove from heat.
- While eggs are cooking, heat 1 teaspoon olive oil in a separate small skillet over medium heat. Add 1 minced garlic clove and cook for 30 seconds until fragrant. Add 5 ounces fresh spinach and cook, tossing, until wilted, about 2-3 minutes.
- Serve the scrambled eggs and sautéed spinach alongside 4 slices whole-grain toast. Garnish with 1/4 cup chopped fresh chives, if desired.
