Ingredients
- 1 tablespoon olive oil
- 1.25 pound ground beef
- 1 yellow onion (large, chopped)
- 2 potatoes (large, peeled and diced into 1/2-inch cubes)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 6 eggs
- 2 tablespoon fresh parsley (chopped)
Instructions
- Heat olive oil in a large oven-safe skillet (cast iron works well) over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess grease and transfer beef to a plate.
- Add chopped yellow onion and diced potatoes to the same skillet. Cook for 10-12 minutes, stirring occasionally, until potatoes are tender and browned.
- Stir in the cooked ground beef, paprika, garlic powder, salt, and black pepper. Mix well to combine.
- Create 6 small wells in the hash mixture. Crack one egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set and yolks are still runny (or to your desired doneness).
- Serve immediately, garnished with fresh parsley if desired.
Notes
For faster cooking of the potatoes, you can microwave them for 3-5 minutes until slightly tender before adding to the skillet.
