Sunday Morning Beef Hash

  1. Heat olive oil in a large oven-safe skillet (cast iron works well) over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain any excess grease and transfer beef to a plate.
  2. Add chopped yellow onion and diced potatoes to the same skillet. Cook for 10-12 minutes, stirring occasionally, until potatoes are tender and browned.
  3. Stir in the cooked ground beef, paprika, garlic powder, salt, and black pepper. Mix well to combine.
  4. Create 6 small wells in the hash mixture. Crack one egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set and yolks are still runny (or to your desired doneness).
  5. Serve immediately, garnished with fresh parsley if desired.

Notes

For faster cooking of the potatoes, you can microwave them for 3-5 minutes until slightly tender before adding to the skillet.
