  1. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain any excess grease.
  2. Add chopped yellow onion and bell peppers to the skillet with the beef. Cook for 5 minutes, stirring occasionally, until vegetables begin to soften.
  3. Stir in the diced potatoes, smoked paprika, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread the mixture evenly in the skillet.
  4. Reduce heat to medium, cover the skillet, and cook for 8-10 minutes, stirring occasionally, until potatoes are tender.
  5. Remove lid and cook for another 2-3 minutes, allowing some potatoes to crisp. Taste and adjust seasoning as needed.
  6. Garnish with fresh parsley if desired and serve directly from the skillet.

Notes

Using pre-diced or thinly sliced refrigerated potatoes dramatically reduces cooking time for this dish.
