Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (80/20 lean)
- 1 yellow onion (small, chopped)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 1 pound diced potatoes (diced or very thinly sliced)
- 1 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.25 cup fresh parsley (chopped)
Instructions
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain any excess grease.
- Add chopped yellow onion and bell peppers to the skillet with the beef. Cook for 5 minutes, stirring occasionally, until vegetables begin to soften.
- Stir in the diced potatoes, smoked paprika, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread the mixture evenly in the skillet.
- Reduce heat to medium, cover the skillet, and cook for 8-10 minutes, stirring occasionally, until potatoes are tender.
- Remove lid and cook for another 2-3 minutes, allowing some potatoes to crisp. Taste and adjust seasoning as needed.
- Garnish with fresh parsley if desired and serve directly from the skillet.
Notes
Using pre-diced or thinly sliced refrigerated potatoes dramatically reduces cooking time for this dish.
