Instructions
- In a small saucepan, bring 1 1/4 cups hot water to a boil. Stir in couscous, cover, remove from heat, and let stand for 5 minutes, then fluff with a fork.
- While couscous steams, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add chopped yellow onion and minced garlic to the skillet and cook until softened, about 3 minutes. Stir in chopped sun-dried tomatoes.
- Pour in chicken broth and add dried basil, dried oregano, salt, and black pepper. Bring to a gentle simmer. Cook for 2-3 minutes, allowing flavors to meld.
- Stir in fresh spinach and cook until wilted, about 1-2 minutes.
