  1. Season the chicken strips evenly with the ground sumac, dried oregano, black pepper, and 1/4 teaspoon of the salt.
  2. Heat garlic-infused olive oil in a large non-stick skillet over medium-high heat for 1 minute.
  3. Add the chicken to the skillet and cook undisturbed for 3 to 4 minutes until golden on the bottom, then flip and cook another 3 minutes until the internal temperature reaches 165°F. Transfer chicken to a clean plate.
  4. Add the sliced zucchini and diced red bell pepper to the hot skillet along with the remaining 1/4 teaspoon of salt. Sauté for 4 to 5 minutes until tender-crisp and lightly browned.
  5. Return the chicken and any resting juices to the skillet. Drizzle with lemon juice and toss everything together for 1 minute to warm through and combine flavors.
  6. Divide between plates, garnish with fresh parsley, and set aside the prepped second portion in an airtight container for Tuesday.
