Ingredients
- 4 cup plain Greek yogurt (whole milk)
- 2 cup strawberries (hulled and diced)
- 1.5 cup blueberries
- 3 tablespoon chia seeds
- 3 tablespoon maple syrup (pure)
- 1 teaspoon vanilla extract
- 1.5 cup rolled oats (old-fashioned)
- 0.5 teaspoon ground cinnamon
Instructions
- In a medium bowl, combine the diced strawberries, fresh blueberries, chia seeds, and 1 tablespoon pure maple syrup. Stir gently and let sit for 5 minutes so the berries release their natural juices.
- In a separate bowl, whisk together the plain Greek yogurt, the remaining 2 tablespoons pure maple syrup, and vanilla extract until creamy.
- In a small dry bowl, toss the rolled oats with ground cinnamon.
- Set out 6 mason jars or parfait glasses. Add 1/4 cup of the vanilla Greek yogurt to the bottom of each container.
- Layer 2 tablespoons of the cinnamon oats over the yogurt, followed by a generous spoonful of the berry-chia mixture. Repeat layers once more to finish, sealing jars for refrigerator storage or serving immediately.
Notes
Parfaits keep exceptionally well in airtight jars in the refrigerator for up to 4 days.
