Stockholm Broiled Salmon

  1. Position an oven rack 6 inches below the broiler and preheat the broiler to high. Line a baking sheet with foil.
  2. Place the salmon fillets on the prepared baking sheet. Brush with 1/2 tablespoon of avocado oil and season with 1/4 teaspoon of salt, black pepper, and 1 tablespoon of fresh dill.
  3. Broil the salmon for 7 to 9 minutes until the tops are lightly caramelized and the fish flakes easily with a fork.
  4. Meanwhile, heat the remaining 1 tablespoon of avocado oil in a wide skillet over medium heat. Add the sliced baby carrots and 2 tablespoons of water; cook covered for 4 minutes until crisp-tender.
  5. Add the chickpeas, green peas, remaining 1/4 teaspoon of salt, remaining dill, and lemon juice to the skillet. Toss gently for 2 minutes until heated through, then serve alongside the broiled salmon.

Notes

Watch the salmon closely under the broiler to prevent overcooking and preserve moisture.
