  1. Bring a large pot of water to a boil. Cook 8 ounces egg-free spaghetti according to package directions. Drain and set aside.
  2. In a small bowl, whisk together 1/2 cup vegetable broth, 1/4 cup low-sodium soy sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, 1 tablespoon cornstarch, and a pinch of red pepper flakes (if using). Set aside.
  3. Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add the sliced seitan and cook for 5-7 minutes, stirring occasionally, until lightly browned. Remove seitan from skillet and set aside.
  4. Add 3 cups broccoli florets and 1 thinly sliced red bell pepper to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp. Add 4 cloves minced garlic and 1 teaspoon grated fresh ginger, and stir-fry for 1 minute until fragrant.
  5. Return the seitan to the skillet. Give the prepared sauce a quick whisk, then pour it over the seitan and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything. Toss with the cooked egg-free spaghetti.
  6. Serve hot, garnished with chopped green onions if desired.
