  1. Cook white rice according to package directions, or in a rice cooker, while you prepare the stir-fry.
  2. In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil to make the sauce. Set aside.
  3. Heat olive oil in a large skillet or wok over medium-high heat. Add thinly sliced pork tenderloin and stir-fry for 3-5 minutes, until browned and cooked through. Remove pork from the skillet and set aside.
  4. Add minced garlic, grated fresh ginger, thinly sliced red bell pepper, thinly sliced carrot, and broccoli florets to the same skillet. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
  5. Return cooked pork to the skillet with the vegetables. Pour the prepared sauce over the pork and vegetables, and stir to coat. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
  6. Serve the stir-fried pork and vegetables immediately over hot cooked white rice. Garnish with chopped fresh cilantro if desired. For younger or picky eaters, serve the rice, pork, and vegetables separately, with sauce on the side.

Notes

You can prepare vegetables ahead of time to make this meal even quicker. Pre-cut stir-fry vegetable mixes can also be used. For a milder flavor for kids, you can reduce the amount of garlic and ginger, or serve sauce on the side.
