Ingredients
- 1 pound pork tenderloin (thinly sliced)
- 1 tablespoon cornstarch
- 2 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 2 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 1 tablespoon vegetable oil
- 4 cup broccoli florets
- 2 carrots (julienned or thinly sliced)
- 1 cup jasmine rice (uncooked)
- 0.5 teaspoon sesame seeds
Instructions
- First, cook the jasmine rice: Combine 1 cup rice with 1 1/2 cups water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.
- In a medium bowl, toss thinly sliced pork tenderloin with cornstarch to coat. In a separate small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated fresh ginger to make the sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add pork and stir-fry for 3-5 minutes, until browned and cooked through. Remove pork from the skillet and set aside.
- Add broccoli florets and julienned carrots to the skillet. Stir-fry for 4-6 minutes until vegetables are crisp-tender.
- Return pork to the skillet with the vegetables. Pour the prepared sauce over everything and stir to coat. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
- Serve the stir-fried pork and broccoli immediately over fluffy jasmine rice. Garnish with sesame seeds, if desired.
Notes
For extra crunch, add a handful of chopped cashews or peanuts at the end of cooking. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave.
