  1. First, cook the jasmine rice: Combine 1 cup rice with 1 1/2 cups water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.
  2. In a medium bowl, toss thinly sliced pork tenderloin with cornstarch to coat. In a separate small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated fresh ginger to make the sauce.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add pork and stir-fry for 3-5 minutes, until browned and cooked through. Remove pork from the skillet and set aside.
  4. Add broccoli florets and julienned carrots to the skillet. Stir-fry for 4-6 minutes until vegetables are crisp-tender.
  5. Return pork to the skillet with the vegetables. Pour the prepared sauce over everything and stir to coat. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
  6. Serve the stir-fried pork and broccoli immediately over fluffy jasmine rice. Garnish with sesame seeds, if desired.

Notes

For extra crunch, add a handful of chopped cashews or peanuts at the end of cooking. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave.
