  1. In a medium bowl, toss chicken pieces with 1 tablespoon soy sauce and cornstarch. Set aside.
  2. In a small bowl, whisk together remaining 1 tablespoon soy sauce, chicken broth, rice vinegar, and sugar. Set aside for the sauce.
  3. Prepare jasmine rice according to package directions while you prepare the stir-fry.
  4. Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add broccoli florets and cook for 3-4 minutes until bright green and slightly tender-crisp. Remove from skillet and set aside.
  5. Add remaining 1 tablespoon sesame oil to the skillet. Add thinly sliced red bell pepper and yellow onion. Stir-fry for 3-5 minutes until vegetables begin to soften. Remove from skillet and set aside with the broccoli.
  6. Add chicken to the hot skillet in a single layer. Cook for 4-5 minutes, turning occasionally, until browned and cooked through. Push chicken to one side.
  7. Add grated fresh ginger and minced garlic to the empty side of the skillet. Cook for 30 seconds until fragrant.
  8. Pour the prepared sauce mixture into the skillet. Bring to a simmer, stirring constantly, until the sauce thickens slightly, about 1-2 minutes.
  9. Return cooked chicken, broccoli, bell pepper, and onion to the skillet. Toss to coat evenly in the sauce. Cook for 1-2 minutes until everything is heated through.
  10. Serve immediately over jasmine rice. Garnish with fresh cilantro if desired.
