Ingredients
- 1 pound lo mein noodles
- 1 tablespoon sesame oil
- 1.5 pound ground beef (80/20 lean)
- 1 red bell pepper (thinly sliced)
- 1 cup snap peas
- 2 carrots (julienned)
- 1 tablespoon fresh ginger (grated)
- 3 clove garlic (minced)
- 0.5 cup beef broth
- 0.25 cup low sodium soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- 1 teaspoon black pepper
- 0.25 cup green onion (chopped, for garnish)
Instructions
- Cook lo mein noodles according to package directions. Drain and set aside.
- While noodles cook, heat sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it apart, until browned, about 6-8 minutes. Drain any excess fat.
- Add the thinly sliced red bell pepper, snap peas, and julienned carrots to the skillet. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
- Stir in the grated fresh ginger and minced garlic. Cook for 1 minute until fragrant.
- In a small bowl, whisk together the beef broth, low sodium soy sauce, cornstarch, and brown sugar. Pour the sauce over the beef and vegetables in the skillet. Cook, stirring constantly, until the sauce thickens, about 2-3 minutes.
- Toss the cooked noodles with the beef and vegetable mixture until well combined. Season with black pepper.
- Serve hot, garnished with chopped green onions if desired.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat gently in a skillet or microwave, adding a splash of water or broth if needed to loosen the sauce.
