Stir-Fried Chicken with Sesame Noodles

  1. In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, grated fresh ginger, garlic powder, and cornstarch. Set aside.
  2. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the chicken breast pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add the fresh broccoli florets and thinly sliced red bell pepper to the same skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
  4. Meanwhile, cook the ramen noodles according to package directions (without the flavor packets). Drain and set aside.
  5. Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything.
  6. Add the cooked ramen noodles to the skillet and toss to combine with the chicken, vegetables, and sauce. Serve immediately, garnished with sesame seeds if desired.

Notes

For extra spice, add a dash of sriracha to the sauce. This dish is excellent for a busy weeknight and stores well for lunch the next day.
