Ingredients
- 1 cup white rice (uncooked)
- 1 pound beef sirloin (thinly sliced)
- 1 tablespoon cornstarch
- 2 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 tablespoon vegetable oil
- 1 tablespoon fresh ginger (minced)
- 2 clove garlic (minced)
- 1 head broccoli (cut into florets)
- 1 red bell pepper (thinly sliced)
- 0.25 cup chicken broth
- 1 teaspoon sugar
- 0.25 teaspoon black pepper
Instructions
- Cook the white rice according to package directions. Typically, combine 1 cup white rice with 2 cups water in a small pot, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
- While rice cooks, in a medium bowl, combine the thinly sliced beef with cornstarch and 1 tablespoon of soy sauce. Toss to coat and set aside for at least 5 minutes.
- In a separate small bowl, whisk together the remaining 1 tablespoon soy sauce, sesame oil, chicken broth, and sugar. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef in a single layer and cook for 2-3 minutes per side until browned. Remove the beef from the skillet and set aside.
- Add the remaining 1 tablespoon vegetable oil to the skillet. Add minced fresh ginger, minced garlic, broccoli florets, and thinly sliced red bell pepper. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
- Return the cooked beef to the skillet. Pour in the prepared sauce mixture. Stir continuously for 1-2 minutes until the sauce thickens and coats the beef and vegetables. Season with black pepper.
- Serve the stir-fried beef and vegetables hot over the cooked white rice.
Notes
If you like a little heat, add a dash of sriracha to the sauce.
