Stir-Fried Beef and Broccoli Noodles

  1. In a medium bowl, combine sirloin steak slices with 1 tablespoon soy sauce and cornstarch. Toss to coat and set aside for 5 minutes.
  2. While beef marinates, cook lo mein noodles according to package directions. Drain and set aside.
  3. Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add frozen broccoli florets and stir-fry for 3-4 minutes until tender-crisp.
  4. Add minced garlic and grated fresh ginger to the broccoli and stir-fry for 30 seconds until fragrant. Remove broccoli mixture from the skillet and set aside.
  5. Add the remaining 1 tablespoon vegetable oil to the hot skillet. Add marinated beef in a single layer and cook for 1-2 minutes per side until browned and cooked through. Work in batches if necessary.
  6. Return broccoli mixture to the skillet with the beef. Add the remaining 1 tablespoon soy sauce, beef broth, brown sugar, and toasted sesame oil. Stir to combine and simmer for 1-2 minutes, until sauce thickens slightly.
  7. Add cooked lo mein noodles to the skillet and toss everything to coat evenly. Serve immediately.

Notes

Freezing sirloin steak for 20-30 minutes before slicing makes it much easier to cut thinly for stir-frying. Adjust the brown sugar to your sweetness preference.
