Ingredients
- 2 eggs (large)
- 0.25 cup unsweetened almond milk
- 1 cup fresh spinach (roughly chopped)
- 2 ounce ham (cooked, diced)
- 0.5 teaspoon Dijon mustard
- 2 tablespoon olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 2 cup mixed greens
- 1 tablespoon apple cider vinegar
Instructions
- Preheat oven to 375°F. Lightly grease a small oven-safe dish with 1/2 tablespoon of olive oil.
- In a bowl, whisk together eggs, unsweetened almond milk, Dijon mustard, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
- Stir in the chopped fresh spinach and diced ham into the egg mixture. Pour into the prepared baking dish.
- Bake for 25-30 minutes, or until the center is set and lightly golden. Let rest for a few minutes before serving.
- While the bake cooks, prepare the salad: In a small bowl, whisk together the remaining 1 1/2 tablespoons of olive oil, apple cider vinegar, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss with the mixed greens just before serving.
- Serve the savory spinach and ham bake with the simple green salad.
Notes
Always check labels to ensure ham and Dijon mustard are sugar-free. If you prefer a firmer texture, you can pre-sauté the spinach slightly to remove excess moisture before adding to the egg mixture.
