  2. In a bowl, whisk together eggs, unsweetened almond milk, Dijon mustard, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.
  3. Stir in the chopped fresh spinach and diced ham into the egg mixture. Pour into the prepared baking dish.
  4. Bake for 25-30 minutes, or until the center is set and lightly golden. Let rest for a few minutes before serving.
  5. While the bake cooks, prepare the salad: In a small bowl, whisk together the remaining 1 1/2 tablespoons of olive oil, apple cider vinegar, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Toss with the mixed greens just before serving.
