  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  2. Add diced yellow onion and minced garlic to the skillet. Cook until softened, about 3-4 minutes.
  3. Stir in ground cumin, chili powder, salt, and black pepper. Cook for 1 minute until fragrant.
  4. Add black beans (rinsed and drained) and canned diced tomatoes with green chiles (undrained) to the skillet. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld.
  5. While the turkey mixture simmers, prepare the instant white rice according to package directions.
  6. To serve, divide cooked instant rice among bowls. Top with the spicy turkey and black bean mixture. Garnish with shredded romaine lettuce, shredded cheddar cheese, a dollop of salsa, and serve with tortilla chips on the side.

Notes

For a milder flavor, reduce the amount of chili powder. Leftovers are excellent for lunch the next day.
