- 1 pound ground turkey
- 1 tablespoon olive oil
- 0.5 yellow onion (diced)
- 2 clove garlic (minced)
- 1 teaspoon ground cumin
- 1 tablespoon chili powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can black beans (rinsed and drained)
- 1 can diced tomatoes with green chiles (undrained)
- 2 pound instant white rice
- 1 cup romaine lettuce (shredded)
- 0.5 cup shredded cheddar cheese
- 0.5 cup salsa
- 2 cup tortilla chips
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Add diced yellow onion and minced garlic to the skillet. Cook until softened, about 3-4 minutes.
- Stir in ground cumin, chili powder, salt, and black pepper. Cook for 1 minute until fragrant.
- Add black beans (rinsed and drained) and canned diced tomatoes with green chiles (undrained) to the skillet. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld.
- While the turkey mixture simmers, prepare the instant white rice according to package directions.
- To serve, divide cooked instant rice among bowls. Top with the spicy turkey and black bean mixture. Garnish with shredded romaine lettuce, shredded cheddar cheese, a dollop of salsa, and serve with tortilla chips on the side.
Notes
For a milder flavor, reduce the amount of chili powder. Leftovers are excellent for lunch the next day.
