  1. Pat the pressed tofu cubes dry with paper towels. Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  2. Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat. Add the tofu cubes and pan-fry for 6-8 minutes, turning occasionally, until golden brown and crispy on all sides. Remove from heat.
  3. While tofu cooks, prepare the white rice according to package directions and steam the shelled edamame as per package instructions.
  4. For the dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or agave nectar, grated fresh ginger, and red pepper flakes. Taste and add 1/4 teaspoon of salt if needed.
  5. To assemble the bowls, divide the cooked white rice among 5 serving bowls. Top each with equal portions of crispy tofu, steamed edamame, and shredded carrots.
  6. Drizzle generously with the spicy sesame dressing just before serving.

Notes

Ensure tofu is well-pressed to achieve crispiness. For a spicier kick, add more red pepper flakes. You can add a sprinkle of toasted sesame seeds for extra texture.
