- 16 ounce extra-firm tofu (pressed and cubed)
- 2 tablespoon olive oil
- 2 cup white rice (cooked)
- 1 cup shelled edamame (steamed)
- 2 carrots (shredded)
- 0.25 cup soy sauce (low sodium preferred)
- 2 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon fresh ginger (grated)
- 0.5 teaspoon red pepper flakes
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (ground)
Instructions
- Pat the pressed tofu cubes dry with paper towels. Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
- Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat. Add the tofu cubes and pan-fry for 6-8 minutes, turning occasionally, until golden brown and crispy on all sides. Remove from heat.
- While tofu cooks, prepare the white rice according to package directions and steam the shelled edamame as per package instructions.
- For the dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or agave nectar, grated fresh ginger, and red pepper flakes. Taste and add 1/4 teaspoon of salt if needed.
- To assemble the bowls, divide the cooked white rice among 5 serving bowls. Top each with equal portions of crispy tofu, steamed edamame, and shredded carrots.
- Drizzle generously with the spicy sesame dressing just before serving.
Notes
Ensure tofu is well-pressed to achieve crispiness. For a spicier kick, add more red pepper flakes. You can add a sprinkle of toasted sesame seeds for extra texture.
