Spicy Szechuan Beef Noodles

  1. Bring a large pot of lightly salted water to a boil. Add 8 ounces lo mein noodles and cook according to package directions, usually 3-5 minutes, until al dente. Drain well.
  2. While noodles cook, in a medium bowl, toss 1 pound beef sirloin with 1 tablespoon cornstarch and 1 tablespoon soy sauce. In a separate small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, 1 teaspoon chili garlic sauce, 1/2 teaspoon sesame oil, and 2 tablespoons water for the sauce.
  3. Heat 1 tablespoon olive oil in a large skillet or wok over high heat. Add the beef in a single layer and cook for 1-2 minutes per side until browned. Remove beef from the skillet and set aside.
  4. Add the remaining 1 tablespoon olive oil to the skillet. Add 1 sliced red bell pepper, 1 sliced green bell pepper, and 0.5 sliced yellow onion. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Add 2 cloves minced garlic and 1 teaspoon grated fresh ginger to the skillet and stir-fry for 30 seconds until fragrant.
  6. Return the cooked beef to the skillet. Add the drained lo mein noodles and pour the prepared sauce over everything. Toss well to combine and heat through, about 1-2 minutes, ensuring everything is coated.
  7. Serve immediately.

Notes

Slice the beef very thinly for quick cooking. Adjust the chili garlic sauce to your preferred spice level.
