Spicy Southwest Impossible Hash Bowls

  1. Heat avocado oil in a large skillet over medium-high heat. Add Impossible Ground and cook for 5-7 minutes, breaking it apart with a spoon, until browned. Drain any excess liquid if necessary.
  2. Add chopped yellow onion, red bell pepper, and green bell pepper to the skillet. Sauté for 3-4 minutes, until vegetables are tender-crisp.
  3. Stir in chili powder, smoked paprika, garlic powder, and black pepper. Cook for 1-2 minutes, stirring constantly, until spices are fragrant and well combined with the Impossible Ground and vegetables.
  4. Meanwhile, prepare the riced cauliflower according to package directions (microwave or stovetop steaming) or steam freshly riced cauliflower until tender.
  5. Divide the steamed riced cauliflower among four bowls. Top generously with the Spicy Southwest Impossible Hash. Garnish with fresh cilantro and a squeeze of lime juice, if desired.

Notes

Be sure to use chili powder that does not contain cumin, as per your preference.
