Ingredients
- 1.5 pound Impossible Ground plant-based meat
- 1 tablespoon avocado oil
- 1 yellow onion (small, chopped)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 2 tablespoon chili powder
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon garlic powder
- 0.5 teaspoon black pepper
- 4 cup riced cauliflower (steamed)
- 0.25 cup fresh cilantro (chopped)
- 2 tablespoon lime juice
Instructions
- Heat avocado oil in a large skillet over medium-high heat. Add Impossible Ground and cook for 5-7 minutes, breaking it apart with a spoon, until browned. Drain any excess liquid if necessary.
- Add chopped yellow onion, red bell pepper, and green bell pepper to the skillet. Sauté for 3-4 minutes, until vegetables are tender-crisp.
- Stir in chili powder, smoked paprika, garlic powder, and black pepper. Cook for 1-2 minutes, stirring constantly, until spices are fragrant and well combined with the Impossible Ground and vegetables.
- Meanwhile, prepare the riced cauliflower according to package directions (microwave or stovetop steaming) or steam freshly riced cauliflower until tender.
- Divide the steamed riced cauliflower among four bowls. Top generously with the Spicy Southwest Impossible Hash. Garnish with fresh cilantro and a squeeze of lime juice, if desired.
Notes
Be sure to use chili powder that does not contain cumin, as per your preference.
