  1. Cook the instant jasmine rice according to package directions, which typically takes about 10-15 minutes. While rice cooks, prepare the rest of the meal.
  2. In a small bowl, whisk together the sambal oelek, soy sauce, granulated sugar, and lime juice. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the trimmed green beans and stir-fry for 3-5 minutes until tender-crisp. Remove green beans from skillet and set aside.
  4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the minced garlic, grated fresh ginger, and chopped shallot, and cook until fragrant, about 1-2 minutes.
  5. Add the peeled and deveined shrimp to the skillet and cook, stirring frequently, until pink and opaque, about 3-4 minutes. Do not overcook.
  6. Return the green beans to the skillet with the shrimp. Pour in the prepared sauce mixture and toss everything together to coat. Cook for 1 minute more, ensuring everything is heated through and well coated.
  7. Serve the spicy shrimp and green bean stir-fry immediately over the freshly cooked jasmine rice.

Notes

Adjust the amount of sambal oelek to your preferred spice level. For a milder dish, reduce the quantity or omit it entirely.
