Ingredients
- 1.5 pound shrimp (raw, large, peeled and deveined)
- 1 tablespoon olive oil
- 1.5 teaspoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup lime juice
- 10 ounce coleslaw mix
- 0.5 cup fresh cilantro (chopped)
- 16 tortillas (6-inch)
- 1 cup salsa
- 0.5 cup sour cream
Instructions
- Prepare the slaw: In a medium bowl, combine 10 ounces pre-shredded coleslaw mix, 1/4 cup chopped fresh cilantro, and 2 tablespoons of the lime juice. Toss to coat and set aside.
- Season the shrimp: In another bowl, toss 1 1/2 pounds shrimp with 1 1/2 teaspoons chili powder, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the remaining 2 tablespoons lime juice.
- Cook the shrimp: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 3-5 minutes, stirring occasionally, until pink and cooked through.
- Warm the tortillas: While the shrimp cooks, warm the 16 tortillas according to package directions (microwave, dry skillet, or oven).
- Assemble the tacos: Fill each warm tortilla with cooked shrimp, a generous spoonful of cilantro-lime slaw, and a drizzle of prepared salsa and sour cream, if desired.
