  1. Combine uncooked white rice, 1 cup water, and 1/4 teaspoon salt in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until water is absorbed and rice is tender. Set aside, keeping warm.
  2. While rice cooks, pat the shrimp dry and season with 1/2 teaspoon Cajun seasoning.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  4. Add yellow onion, green bell pepper, and celery to the same skillet. Sauté for 3-4 minutes until softened.
  5. Stir in minced garlic and cook for 30 seconds until fragrant. Add the remaining 1 teaspoon Cajun seasoning, diced tomatoes, chicken broth, 1/4 teaspoon salt, and black pepper. Bring to a simmer.
  6. Return cooked shrimp to the skillet and stir to combine. Cook for 1-2 minutes to heat through.
  7. Serve the spicy shrimp skillet over the Cajun rice. Garnish with fresh parsley if desired.

Notes

Adjust Cajun seasoning to control spice level. This dish is excellent reheated for lunch the next day.
