Spicy Shrimp Lo Mein

  1. Bring a large pot of water to a boil and cook the lo mein noodles according to package directions, about 4 to 5 minutes until tender. Drain and rinse briefly under warm water to prevent sticking.
  2. In a small bowl, whisk together the low-sodium soy sauce, chicken broth, chili crisp, toasted sesame oil, brown sugar, and black pepper until the sugar is dissolved.
  3. Heat 1 tablespoon of vegetable oil in a large wok or deep 12-inch skillet over medium-high heat. Add the shrimp in a single layer and cook undisturbed for 2 minutes, then stir and cook 1 to 2 minutes longer until pink, opaque, and cooked through to an internal temperature of 145 degrees F. Transfer shrimp to a clean plate.
  4. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red bell peppers, the whites of the green onions, and the grated fresh ginger. Stir-fry over medium-high heat for 2 minutes until peppers are crisp-tender.
  5. Return the cooked shrimp and the drained lo mein noodles to the skillet. Pour in the sauce mixture and toss everything continuously over medium heat for 2 minutes until the noodles are evenly coated and heated through.
  6. Remove from heat, garnish with the reserved green onion tops, and serve immediately.

Notes

Leftovers reheat easily in a skillet over medium heat with a splash of water to loosen the noodles.
