  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat for 1 minute.
  2. Add lean ground pork to the skillet and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  3. Add yellow onion, green bell pepper, and garlic to the skillet. Cook, stirring, for 3-4 minutes until vegetables begin to soften.
  4. Stir in ground cumin, chili powder, and black pepper, cooking for 30 seconds until fragrant.
  5. Add rinsed and drained black beans and undrained diced tomatoes to the skillet. Bring to a simmer and cook for 5 minutes, stirring occasionally, until slightly thickened.
  6. While the pork and bean mixture simmers, heat the pre-cooked white rice according to package directions (if using microwave pouches).
  7. Divide the hot white rice among serving bowls, then top with the spicy pork and black bean mixture. Garnish with shredded cheddar cheese and chopped fresh cilantro if desired. Serve with tortilla chips.
