- 12 ounce spaghetti pasta (quick-cook)

Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat the vegetable oil in a large skillet over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Add the thinly sliced red bell pepper, minced garlic, and grated ginger to the skillet with the chicken. Sauté for 3-5 minutes until the bell pepper is slightly softened.
- In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sriracha, and water (or chicken broth) until smooth. If the sauce is too thick, add a little more water until it reaches a pourable consistency.
- Pour the peanut sauce over the chicken and vegetables in the skillet. Stir to combine, then add the cooked spaghetti and toss everything together until evenly coated. Serve hot, garnished with sliced green onions if desired.
Notes
For a vegetarian option, you can substitute firm tofu or additional vegetables for the ground chicken. Adjust sriracha to your family's preferred spice level.
