Spicy Lemon Pepper Tilapia

  1. In a shallow dish, sprinkle both sides of the tilapia fillets with the black pepper, garlic powder, red pepper flakes, and salt.
  2. In a medium saucepan, bring the vegetable broth to a boil. Stir in the instant couscous, cover, remove from heat, and let stand for 5 minutes. Fluff with a fork.
  3. While the couscous is cooking, heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Add the tilapia fillets and cook for 3-4 minutes per side, or until the fish flakes easily with a fork.
  4. Transfer the cooked tilapia to a plate and drizzle with lemon juice. Set aside.
  5. In the same skillet or a separate pot, heat the remaining 1 tablespoon of olive oil. Add the fresh green beans and sauté or steam with a splash of water for 5-7 minutes, until tender-crisp.
  6. Serve the Spicy Lemon Pepper Tilapia immediately with the fluffy couscous and steamed green beans.

Notes

If you don't have fresh lemon, a tablespoon of bottled lemon juice works in a pinch. Adjust red pepper flakes to taste.
