Spicy Lamb and Herb Skewers with Lemon-Garlic Zucchini

  1. In a medium bowl, combine ground lamb, fresh parsley, fresh mint, smoked paprika, cumin, red pepper flakes, salt, and black pepper. Mix well to combine.
  2. Divide the lamb mixture into 8 equal portions and shape each around a wooden or metal skewer. If using wooden skewers, soak them in water for at least 15 minutes prior to prevent burning.
  3. Heat 1 teaspoon of olive oil in a large skillet or grill pan over medium-high heat. Add the lamb skewers and cook for 3-4 minutes per side, or until cooked through and nicely browned, about 8-10 minutes total. Remove and keep warm.
  4. Add the remaining 2 teaspoons olive oil to the same skillet. Add the sliced zucchini and minced garlic. Sauté for 4-5 minutes until zucchini is tender-crisp. Stir in the fresh lemon juice.
  5. Serve the lamb skewers immediately with the lemon-garlic zucchini on the side.

Notes

For best results, do not overmix the lamb mixture, as it can make the skewers tough. If you don't have skewers, form the lamb mixture into small patties.
