  1. In a small bowl, whisk together the soy sauce, honey, minced garlic, grated fresh ginger, red pepper flakes, cornstarch, and 2 tablespoons of water to create the sauce.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces and cook for 5-7 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
  3. Add broccoli florets to the same skillet along with 1/4 cup of water. Cover and steam for 3-5 minutes, or until tender-crisp. Remove broccoli and set aside.
  4. While chicken and broccoli cook, prepare instant rice according to package directions, yielding about 2 cups cooked rice.
  5. Pour the prepared sauce into the skillet. Bring to a simmer over medium heat, stirring constantly, until the sauce thickens, about 1-2 minutes.
  6. Return the cooked chicken and broccoli to the skillet, tossing to coat evenly with the sauce.
  7. Divide the cooked instant rice into two bowls. Top with the spicy honey garlic chicken and broccoli. Garnish with chopped green onions and sesame seeds if desired, and serve immediately.
