Instructions
- In a small bowl, whisk together the soy sauce, honey, minced garlic, grated fresh ginger, red pepper flakes, cornstarch, and 2 tablespoons of water to create the sauce.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breast pieces and cook for 5-7 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
- Add broccoli florets to the same skillet along with 1/4 cup of water. Cover and steam for 3-5 minutes, or until tender-crisp. Remove broccoli and set aside.
- While chicken and broccoli cook, prepare instant rice according to package directions, yielding about 2 cups cooked rice.
- Pour the prepared sauce into the skillet. Bring to a simmer over medium heat, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Return the cooked chicken and broccoli to the skillet, tossing to coat evenly with the sauce.
- Divide the cooked instant rice into two bowls. Top with the spicy honey garlic chicken and broccoli. Garnish with chopped green onions and sesame seeds if desired, and serve immediately.
