Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (lean)
- 0.5 cup yellow onion (chopped)
- 1 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon paprika
- 0.25 teaspoon cayenne pepper
- 1 can black beans (rinsed, drained)
- 0.5 cup frozen corn
- 0.5 cup beef broth
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup instant white rice
- 1 Caesar salad kit
Instructions
- Prepare the instant white rice according to package directions. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion, breaking up the beef with a spoon. Cook until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.
- Stir in the minced garlic, chili powder, ground cumin, and paprika (and cayenne pepper, if using). Cook for 1 minute until fragrant.
- Add the rinsed black beans, frozen corn, and beef broth or water to the skillet. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- While the beef mixture simmers, prepare the bagged Caesar salad kit as directed on the package.
- Serve the spicy ground beef mixture over the instant white rice, with the fresh Caesar salad on the side.
Notes
For a milder flavor, omit the cayenne pepper. You can also add a dollop of sour cream or a sprinkle of shredded cheddar cheese if desired.
