Spicy Ground Beef and Rice

  1. Prepare the instant white rice according to package directions. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and chopped yellow onion, breaking up the beef with a spoon. Cook until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.
  3. Stir in the minced garlic, chili powder, ground cumin, and paprika (and cayenne pepper, if using). Cook for 1 minute until fragrant.
  4. Add the rinsed black beans, frozen corn, and beef broth or water to the skillet. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
  5. While the beef mixture simmers, prepare the bagged Caesar salad kit as directed on the package.
  6. Serve the spicy ground beef mixture over the instant white rice, with the fresh Caesar salad on the side.

Notes

For a milder flavor, omit the cayenne pepper. You can also add a dollop of sour cream or a sprinkle of shredded cheddar cheese if desired.
