Ingredients
- 1 pound ground beef (80/20 lean)
- 2 tablespoon olive oil
- 4 cup broccoli florets
- 2 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 2 tablespoon soy sauce (low-sodium)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha
- 0.5 teaspoon black pepper (freshly ground)
Instructions
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Remove the beef from the skillet and set aside. Add the remaining 1 tablespoon of olive oil to the skillet, then add the broccoli florets. Sauté for 5 to 7 minutes, until tender-crisp.
- Add the minced garlic and grated fresh ginger to the skillet with the broccoli. Sauté for 1 minute until fragrant.
- Return the cooked ground beef to the skillet. In a small bowl, whisk together the low-sodium soy sauce, sesame oil, rice vinegar, sriracha, and black pepper. Pour the sauce over the beef and broccoli.
- Toss everything to coat well and cook for 1 to 2 minutes, allowing the sauce to thicken slightly. Serve immediately in bowls.
Notes
For extra crunch, garnish with toasted sesame seeds or chopped scallions.
