Ingredients
- 1.25 pound tilapia fillet
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 0.5 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.25 teaspoon cayenne pepper
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 plantains (ripe, peeled, sliced 1/2-inch thick)
- 1 mango (ripe, diced)
- 0.5 red bell pepper (finely diced)
- 0.25 cup fresh cilantro (chopped)
- 1 tablespoon lime juice
Instructions
- Preheat a grill or grill pan to medium-high heat. In a small bowl, combine the paprika, garlic powder, onion powder, cayenne pepper, 1/4 teaspoon of the salt, and 1/8 teaspoon of the black pepper.
- Pat the tilapia fillets dry. Drizzle with 1 teaspoon of olive oil and rub the spice mixture evenly over both sides of the fillets.
- Lightly brush the plantain slices with 1 teaspoon of olive oil. Place the seasoned tilapia on the preheated grill. Cook for 4-6 minutes per side, or until the fish flakes easily with a fork. Grill the plantain slices alongside the fish for 3-4 minutes per side, until golden brown and tender.
- While the fish and plantains cook, prepare the mango salsa. In a medium bowl, combine the diced mango, finely diced red bell pepper, chopped fresh cilantro, and lime juice. Season with the remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Serve the grilled tilapia immediately with a generous spoonful of mango salsa and the roasted plantains.
Notes
Ensure plantains are ripe (mostly black or very dark yellow with black spots) for best sweetness and texture.
