- 0.5 cup instant mashed potato flakes

Instructions
- Season the 4 ounces small pieces of chicken breast with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Prepare the 1/2 cup instant mashed potato flakes according to package directions, while cooking the chicken.
- Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, until cooked through and lightly browned.
- Add the 2 cloves minced garlic and 1/2 teaspoon red pepper flakes to the skillet with the chicken. Cook for 1 minute more, stirring constantly, until garlic is fragrant (be careful not to burn the garlic).
