Ingredients
- 1.5 pound chicken thigh (boneless, skinless, cut into 1-inch pieces)
- 1.5 pound broccoli (fresh, cut into florets)
- 3 tablespoon soy sauce
- 2 tablespoon brown sugar (packed)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha
- 1 tablespoon cornstarch
- 2 clove garlic (minced)
- 1 ounce fresh ginger (1-inch piece, grated)
- 2 tablespoon vegetable oil
- 3 pound white rice (microwaveable pouches)
- 2 tablespoon toasted sesame seeds
- 0.25 cup green onion (chopped)
Instructions
- In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, sriracha, and cornstarch. Add the minced garlic and grated ginger, and whisk until combined. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cut chicken thigh pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the same skillet. Add the broccoli florets and stir-fry for 4-6 minutes, or until crisp-tender. If needed, add a splash of water (1-2 tablespoons) and cover for a minute to steam the broccoli slightly.
- Return the cooked chicken to the skillet with the broccoli. Give the sauce mixture another quick whisk and pour it over the chicken and broccoli. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the chicken and broccoli.
- While the chicken and broccoli are cooking, prepare the microwaveable white rice according to package directions.
- Divide the cooked white rice among serving bowls. Top with the spicy garlic chicken and broccoli mixture. Garnish with toasted sesame seeds and chopped green onions, if desired, before serving.
Notes
Leftovers store well in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop.
