Instructions
- Place a large skillet over medium-high heat. Add Impossible ground meat, breaking it apart with a wooden spoon, and cook for 4 to 5 minutes until browned.
- Add diced poblano pepper, yellow onion, minced garlic, and salt to the skillet. Cook for 5 minutes until vegetables soften and develop light browning.
- Stir in fire-roasted diced tomatoes with their juices, minced chipotle peppers in adobo, and dried oregano. Bring to a gentle boil.
- Fold in drained pinto beans, lower heat to medium-low, and simmer uncovered for 8 minutes until thickened and rich.
- Remove from heat, stir in fresh cilantro, and divide into bowls to serve.
