- 2 flour tortillas (8-inch)
- 0.25 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 0.5 cup prepared salsa
- 0.25 cup prepared guacamole
- 0.125 teaspoon salt
Instructions
- In a small saucepan or microwave-safe bowl, combine 1/2 cup rinsed and drained canned black beans, 0.5 each finely diced yellow onion, 0.5 clove minced garlic, 1/2 teaspoon chili powder, 1/4 teaspoon ground cumin, 1/4 teaspoon smoked paprika, and 2 tablespoons vegetable broth. Simmer on the stovetop for 5 minutes, or microwave for 2-3 minutes, until the onion softens and flavors meld. Lightly mash about half the beans with a fork for a creamier texture. Season with salt to taste.
- Lay one 8-inch flour tortilla in a large non-stick skillet over medium heat. Sprinkle 1/8 cup shredded cheddar cheese over half the tortilla. Spoon half of the black bean mixture over the cheese.
- Fold the other half of the tortilla over the filling to create a half-moon shape. Cook for 2-3 minutes per side, or until the tortilla is golden brown and crispy and the cheese is melted. Repeat with the remaining tortilla, cheese, and black bean mixture.
- Cut the quesadillas in half and serve immediately with 1/2 cup prepared salsa and 1/4 cup prepared guacamole.
Notes
Adjust the chili powder and smoked paprika for your preferred spice level. A quick guacamole can be made by mashing a ripe avocado with lime juice and a pinch of salt.
