Spicy Black Bean Quesadillas

  1. In a small saucepan or microwave-safe bowl, combine 1/2 cup rinsed and drained canned black beans, 0.5 each finely diced yellow onion, 0.5 clove minced garlic, 1/2 teaspoon chili powder, 1/4 teaspoon ground cumin, 1/4 teaspoon smoked paprika, and 2 tablespoons vegetable broth. Simmer on the stovetop for 5 minutes, or microwave for 2-3 minutes, until the onion softens and flavors meld. Lightly mash about half the beans with a fork for a creamier texture. Season with salt to taste.
  2. Lay one 8-inch flour tortilla in a large non-stick skillet over medium heat. Sprinkle 1/8 cup shredded cheddar cheese over half the tortilla. Spoon half of the black bean mixture over the cheese.
  3. Fold the other half of the tortilla over the filling to create a half-moon shape. Cook for 2-3 minutes per side, or until the tortilla is golden brown and crispy and the cheese is melted. Repeat with the remaining tortilla, cheese, and black bean mixture.
  4. Cut the quesadillas in half and serve immediately with 1/2 cup prepared salsa and 1/4 cup prepared guacamole.

Notes

Adjust the chili powder and smoked paprika for your preferred spice level. A quick guacamole can be made by mashing a ripe avocado with lime juice and a pinch of salt.
