Ingredients
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 3 clove garlic (minced)
- 30 ounce black beans (rinsed and drained, no-salt-added)
- 0.5 cup plain bread crumbs
- 1 egg (large)
- 1 teaspoon chili powder (no salt added)
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon black pepper
- 0.25 cup lime juice
- 1 cup frozen corn (thawed)
- 1 avocado (diced)
- 0.25 cup fresh cilantro (chopped)
- 8 romaine lettuce leaves (large, for serving)
Instructions
- Heat 1 teaspoon olive oil in a small skillet over medium heat. Add chopped yellow onion and cook for 3-4 minutes until softened. Add 2 cloves minced garlic and cook for another 1 minute. Set aside to cool slightly.
- In a large bowl, mash 1 1/2 cans of rinsed and drained black beans with a fork or potato masher, leaving some whole for texture.
- Add the cooled onion and garlic mixture, plain unsalted bread crumbs, egg, chili powder, ground cumin, smoked paprika, black pepper, and lime juice to the mashed beans. Mix thoroughly until well combined.
- Divide the mixture into 4 patties.
- Heat the remaining 2 teaspoons olive oil in a large non-stick skillet over medium heat. Cook the patties for 4-6 minutes per side, or until golden brown and heated through.
- While patties cook, prepare the salsa. In a medium bowl, combine the remaining 1/2 can of rinsed and drained black beans, thawed frozen corn, diced avocado, chopped fresh cilantro, and remaining 1 clove minced garlic.
- Serve the Spicy Black Bean Burgers in large romaine lettuce leaves with a generous scoop of corn and avocado salsa.
Notes
You can prepare the black bean patties ahead of time and store them in the refrigerator for up to 2 days before cooking. For an even more protein-rich meal, you could serve with a hard-boiled egg on the side.
