- 1 can black beans (rinsed and drained)
- 1 cup vegetable broth
- 0.25 cup fresh cilantro (chopped)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 avocado (large, sliced)
- 0.25 cup green onions (chopped)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add diced yellow onion to the skillet and cook until softened, about 3-5 minutes. Stir in minced garlic, chili powder, ground cumin, and smoked paprika, cooking for 1 minute until fragrant. Add cayenne pepper if using.
- Stir in diced sweet potato, black beans, and vegetable broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until sweet potatoes are tender.
- Remove from heat. Stir in chopped fresh cilantro and season with salt and black pepper to taste.
- Divide the skillet mixture among 5 bowls. Garnish each serving with sliced avocado and green onions, if desired.
