Instructions
- In a small bowl, combine the chili powder, cumin, garlic powder, cayenne pepper (if using), 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. This is your taco seasoning.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- Stir the taco seasoning into the cooked ground beef and continue to cook for 1 minute, ensuring the beef is well coated and fragrant.
- While the beef cooks, prepare the black bean salsa: In a medium bowl, combine the rinsed and drained black beans, thawed frozen corn, finely diced red onion, chopped fresh cilantro, and lime juice. Stir gently to combine.
- Arrange the butter lettuce leaves or romaine lettuce leaves on plates. Fill each lettuce cup with a portion of the seasoned ground beef. Top with a spoonful of the black bean salsa and a slice of avocado, if desired. Serve immediately.
Notes
