Ingredients
- 1 pound ground beef (93% lean or higher)
- 0.5 yellow onion (medium, finely diced)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup chicken broth
- 2 tablespoon lime juice
- 8 Romaine lettuces (large, separated)
- 0.5 cup fresh cilantro (chopped)
- 1 avocado
- 0.5 cup plain Greek yogurt (non-fat)
Instructions
- In a large skillet, cook ground beef and finely diced yellow onion over medium-high heat, breaking up the beef with a spoon, until browned. Drain any excess fat.
- Add minced garlic, chili powder, ground cumin, smoked paprika, 1/2 teaspoon salt, and black pepper to the skillet. Cook for 1 minute more, stirring until fragrant.
- Stir in the 1/4 cup water or chicken broth and 1 tablespoon lime juice. Bring to a simmer and cook for 2-3 minutes, until most of the liquid has evaporated. Remove from heat and stir in 1/4 cup chopped fresh cilantro.
- While beef cooks, prepare the avocado crema. In a small bowl, mash the ripe avocado with a fork. Stir in plain non-fat Greek yogurt, 1 tablespoon lime juice, and remaining 1/4 teaspoon salt.
- Serve the seasoned ground beef in large Romaine lettuce leaves, topped with a dollop of avocado crema and remaining 1/4 cup chopped fresh cilantro.
Notes
For an extra kick, add a pinch of red pepper flakes to the beef seasoning. Leftovers are great for meal prep; store beef and crema separately.
