  1. In a large skillet, cook ground beef and finely diced yellow onion over medium-high heat, breaking up the beef with a spoon, until browned. Drain any excess fat.
  2. Add minced garlic, chili powder, ground cumin, smoked paprika, 1/2 teaspoon salt, and black pepper to the skillet. Cook for 1 minute more, stirring until fragrant.
  3. Stir in the 1/4 cup water or chicken broth and 1 tablespoon lime juice. Bring to a simmer and cook for 2-3 minutes, until most of the liquid has evaporated. Remove from heat and stir in 1/4 cup chopped fresh cilantro.
  4. While beef cooks, prepare the avocado crema. In a small bowl, mash the ripe avocado with a fork. Stir in plain non-fat Greek yogurt, 1 tablespoon lime juice, and remaining 1/4 teaspoon salt.
  5. Serve the seasoned ground beef in large Romaine lettuce leaves, topped with a dollop of avocado crema and remaining 1/4 cup chopped fresh cilantro.

Notes

For an extra kick, add a pinch of red pepper flakes to the beef seasoning. Leftovers are great for meal prep; store beef and crema separately.
