Ingredients
- 1 pound ground beef (lean)
- 1 yellow onion (chopped)
- 2 clove garlic (minced)
- 2 tablespoon taco seasoning mix
- 1 can black beans (rinsed and drained)
- 1 cup frozen corn (thawed)
- 0.5 cup water
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 6 ounce tortilla chips
- 0.5 cup prepared salsa
- 0.5 cup shredded cheddar cheese
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Add chopped yellow onion to the skillet and cook for 3-4 minutes until softened.
- Stir in minced garlic, taco seasoning mix, kosher salt, and black pepper. Cook for 1 minute until fragrant.
- Add rinsed and drained black beans, thawed frozen corn, and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until slightly thickened.
- Serve the spicy beef and black beans hot with tortilla chips. Top with prepared salsa and shredded cheddar cheese, if desired.
Notes
For an extra kick, add a dash of your favorite hot sauce to the beef mixture. Leftovers are great for lunch the next day and can be reheated in the microwave.
