  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  2. Add chopped yellow onion to the skillet and cook for 3-4 minutes until softened.
  3. Stir in minced garlic, taco seasoning mix, kosher salt, and black pepper. Cook for 1 minute until fragrant.
  4. Add rinsed and drained black beans, thawed frozen corn, and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until slightly thickened.
  5. Serve the spicy beef and black beans hot with tortilla chips. Top with prepared salsa and shredded cheddar cheese, if desired.

Notes

For an extra kick, add a dash of your favorite hot sauce to the beef mixture. Leftovers are great for lunch the next day and can be reheated in the microwave.
