- 1 pound ground beef (lean)
- 1 yellow onion (medium, diced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon garlic powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 cup beef broth
- 1 can black beans (15 ounces, rinsed and drained)
- 1 can corn (15 ounces, drained)
- 2 cup instant white rice
- 4 cup water
- 1.5 cup shredded cheddar cheese (for serving)
- 0.25 cup fresh cilantro (chopped, for serving)
- 1 cup salsa (for serving)
Instructions
- Cook the instant white rice according to package directions, using 4 cups of water. Cover and set aside to keep warm.
- While rice cooks, heat a large skillet over medium-high heat. Add the lean ground beef and diced yellow onion. Cook, breaking up the beef with a spoon, until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.
- Stir in the chili powder, ground cumin, smoked paprika, garlic powder, salt, and black pepper. Cook for 1 minute more until fragrant.
- Pour in the beef broth, and add the rinsed and drained black beans and drained corn. Bring to a simmer and cook for 3-5 minutes, allowing the flavors to meld and the mixture to heat through.
- To serve, divide the cooked instant white rice among 6 bowls. Top with the spicy beef and black bean mixture.
- Garnish each bowl generously with shredded cheddar cheese, a dollop of salsa, and an optional sprinkle of fresh cilantro. Serve immediately.
Notes
You can add other toppings like sour cream, avocado slices, or crushed tortilla chips for extra crunch and flavor.
