  1. First, rinse 1 cup jasmine rice under cold water until clear. Combine rice with 2 cups water and 1/4 teaspoon salt in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 pound ground turkey and cook, breaking it up with a spoon, until browned, about 5 to 7 minutes. Drain any excess fat.
  3. Stir in 1/2 each diced yellow onion, 2 cloves minced garlic, and 1 teaspoon grated fresh ginger. Cook for 2 minutes, until fragrant.
  4. Add 1 each sliced red bell pepper and 1 each sliced green bell pepper. Cook for 3 to 5 minutes, stirring occasionally, until vegetables are tender-crisp.
  5. In a small bowl, whisk together 1/4 cup gluten-free soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon red pepper flakes. Pour the sauce over the turkey and vegetables, stirring to coat.
  6. Stir in 1/2 cup roughly chopped fresh basil leaves and cook for 1 minute until just wilted. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Serve the spicy basil turkey immediately over the cooked jasmine rice.

Notes

If you enjoy extra heat, you can add more red pepper flakes to taste. Garnish with a sprinkle of chopped fresh cilantro for extra freshness.
