Instructions

  1. In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sriracha, sesame oil, grated fresh ginger, and minced garlic to create the stir-fry sauce. Set aside.
  2. Cook the jasmine rice according to package directions or in a rice cooker. For 1 cup of rice, typically combine 1 cup of jasmine rice with 2 cups of water and bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
  3. While rice cooks, steam the broccoli florets until tender-crisp, about 3-5 minutes. Alternatively, microwave according to package directions.
  4. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced red bell pepper and yellow bell pepper. Stir-fry for 3-4 minutes until they begin to soften but are still crisp.
  5. Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes per side, until pink and opaque.
  6. Pour the prepared stir-fry sauce over the shrimp and vegetables. Stir constantly for 1 minute until the sauce thickens slightly and coats everything.
  7. Remove from heat and stir in the fresh basil leaves until wilted.
  8. Serve the spicy basil shrimp stir-fry immediately over the jasmine rice, with the steamed broccoli on the side.

Notes

Adjust sriracha to your preferred spice level. If you can't find fresh basil, dried can be used, but fresh provides the best flavor.
