  1. Cook the ground beef: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound lean ground beef and 1 chopped yellow onion. Cook, breaking up the beef with a spoon, until browned and onion is softened, about 7-8 minutes. Drain any excess fat.
  2. Season the beef: Stir in 2 tablespoons taco seasoning and 1/2 cup water. Bring to a simmer and cook for 3-5 minutes, until the sauce has thickened and coated the beef.
  3. Prepare corn and black bean salsa: In a medium bowl, combine 1 can black beans (rinsed and drained), 1 cup thawed frozen corn, and 1/4 cup chopped fresh cilantro. Stir well.
  4. Make cilantro-lime dressing: In a small bowl, whisk together 1/4 cup sour cream, the juice of 1 lime, and remaining 1/4 cup chopped fresh cilantro until smooth.
  5. Assemble bowls: Divide 2 cups cooked white rice among serving bowls. Top with the seasoned ground beef, corn and black bean salsa, and 2 cups shredded romaine lettuce. Drizzle with the cilantro-lime dressing before serving.

Notes

For an extra kick, add a pinch of cayenne pepper to the beef seasoning. Store leftover components separately to maintain freshness, then assemble just before eating.
