Ingredients
- 24 ounce Impossible steak bites
- 2 poblano peppers (medium, seeded and diced)
- 1 can black beans (rinsed and drained)
- 1 cup white rice (uncooked)
- 1 cup salsa verde (prepared)
- 1 tablespoon olive oil
- 1 tablespoon ancho chile powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Combine white rice, 2 cups of water, and 1/2 teaspoon of the kosher salt in a medium saucepan. Bring to a boil over medium-high heat, then cover, reduce heat to low, and simmer for 18 minutes until tender and liquid is absorbed.
- Toss Impossible steak bites with ancho chile powder, garlic powder, and the remaining 1/2 teaspoon of kosher salt in a large bowl until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned Impossible steak bites and cook for 5 to 6 minutes, turning occasionally, until browned and caramelized on the edges.
- Add diced poblano pepper to the skillet with the steak bites and sauté for 4 minutes until tender and slightly blistered.
- Stir in the rinsed black beans and salsa verde, simmering for 2 minutes until everything is thoroughly heated through and coated in sauce.
- Divide warm rice into bowls, top with the spicy steak bite and poblano mixture, and garnish with fresh cilantro if desired.
Notes
Keeps well in an airtight container in the refrigerator for up to 4 days. Reheat rice and steak topping in the microwave for 1 to 2 minutes until hot.
