  1. Preheat oven to 400°F (200°C). Toss the sliced carrots with 1 tablespoon olive oil, salt, and black pepper. Spread in a single layer on a baking sheet and roast for 15-20 minutes, or until tender-crisp.
  2. While carrots roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in diced yellow onion and minced garlic. Cook for 3-4 minutes until the onion softens.
  4. Add ground cumin, ground coriander, and smoked paprika. Cook for 1 minute until fragrant.
  5. Stir in undrained diced tomatoes, vegetable broth, and uncooked white rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
  6. While the skillet simmers, whisk together tahini, lemon juice, and water in a small bowl until smooth. Season with a pinch of salt.
  7. Fluff turkey and rice mixture with a fork. Season with additional salt and black pepper to taste.
  8. Serve the turkey skillet with roasted carrots on the side, drizzled with the tahini sauce.
