- 1.5 pound carrots (peeled and sliced)

- 0.5 teaspoon black pepper (to taste)
Instructions
- Preheat oven to 400°F (200°C). Toss the sliced carrots with 1 tablespoon olive oil, salt, and black pepper. Spread in a single layer on a baking sheet and roast for 15-20 minutes, or until tender-crisp.
- While carrots roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until browned, about 5-7 minutes. Drain any excess fat.
- Stir in diced yellow onion and minced garlic. Cook for 3-4 minutes until the onion softens.
- Add ground cumin, ground coriander, and smoked paprika. Cook for 1 minute until fragrant.
- Stir in undrained diced tomatoes, vegetable broth, and uncooked white rice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and liquid is absorbed.
- While the skillet simmers, whisk together tahini, lemon juice, and water in a small bowl until smooth. Season with a pinch of salt.
- Fluff turkey and rice mixture with a fork. Season with additional salt and black pepper to taste.
- Serve the turkey skillet with roasted carrots on the side, drizzled with the tahini sauce.
