Ingredients
- 4 package tempeh (crumbled)
- 1 tablespoon olive oil
- 1 yellow onion (diced)
- 1 red bell pepper (seeded and diced)

- 0.5 teaspoon smoked paprika
- 0.25 teaspoon cayenne pepper
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 can black beans (rinsed and drained)
- 2 tablespoon fresh lime juice
- 0.25 cup red onion (finely chopped)
- 1 head green leaf lettuce (separated into cups)
Instructions
- In a bowl, crumble the 4 packages of tempeh into small pieces.
- Heat the 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the 1 yellow diced onion, 1 diced red bell pepper, and 1 diced green bell pepper. Cook for 5-7 minutes until vegetables are tender-crisp.
- Add the 2 cloves of minced garlic and cook for 1 minute until fragrant.
- Stir in the crumbled tempeh, 1 tablespoon chili powder, 1/2 teaspoon smoked paprika, and 1/4 teaspoon cayenne pepper. Season with salt and black pepper. Cook for 7-10 minutes, stirring occasionally, until the tempeh is browned and heated through.
- While the tempeh cooks, prepare the black bean salad: In a small bowl, combine the 1 can of rinsed and drained black beans, 2 tablespoons fresh lime juice, and 1/4 cup finely chopped red onion. Season with a pinch of salt and pepper.
- Serve the spiced tempeh-pepper crumbles in lettuce cups with a side of black bean salad.
Notes
Ensure tempeh is crumbled finely for a good 'ground meat' texture. Adjust cayenne pepper to your preferred spice level. Can be served over rice if desired.
